Salmon Florentine

I love this super yummy super good for you dinner. The Florentine topping would be equally delish on chicken, over pasta, or on any other fish you like. 


Salmon Florentine
Ingredients
1 package frozen spinach thawed and drained
1 tbs olive oil
2 finely chopped garlic cloves
1/4 cup chopped sun dried tomatoes
1/4 tsp red pepper flakes
1/4 cup ricotta cheese
1 lb salmon fillets


Method
Heat oven to 400 degrees.
Heat olive oil in a non stick pan over medium heat. Add chopped garlic and cook for 1 minute. Add in spinach, tomatoes, red pepper flakes, and cook for 2 minutes. Remove from heat and let cool about 15 minutes. Add the ricotta to the spinach mixture and stir to combine.
Lightly coat a baking dish with butter or a nonstick spray. Place salmon in baking dish and top each piece with the spinach mixture and cook for about 15-20 minutes.
